Ingredients:
- 1 tbsp butter
- 2 stalks celery, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 1 clove garlic, minced
- 3–4 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 bay leaf
- Salt and pepper, to taste
- 2 chicken breasts
- 100g (2/3 cup) wild rice or long-grain rice
- 1.5 liters (6 cups) chicken stock
- 250ml (1 cup) double/heavy cream
- 3 tbsp butter, melted
- 3 tbsp flour
- 30g (1 cup) fresh spinach (optional)
Step-by-Step Instructions:
1️⃣ Sauté the Veggies – Melt butter in a large pot over low heat. Add celery, carrots, and onion; cook 5–7 minutes until softened. Stir in garlic and thyme, cooking for another 30 seconds for extra flavor .
2️⃣ Build the Base – Pour in chicken stock, add bay leaf, a pinch of salt and pepper, chicken breasts, and wild rice. Bring to a boil, then reduce heat to a gentle simmer for 45 minutes or until rice is tender.
3️⃣ Shred the Chicken – Remove chicken breasts, shred with two forks, and return to the pot along with the heavy cream.
4️⃣ Thicken the Soup – In a small bowl, combine melted butter and flour to make a roux. Stir it into the soup, bring to a gentle boil, and cook for a few minutes until thickened 🥄.
5️⃣ Finish & Serve – Stir in spinach (if using), adjust seasoning, and serve hot with crusty bread.
Pro Tips:
- Meal Prep Friendly: Store leftovers in the fridge for up to 3 days — it tastes even better the next day!
- Rice Swap: Try long-grain white rice if wild rice isn’t available.
- Extra Creamy: Add a splash more cream for a richer texture.
