- Bake the cookies in the preheated oven for 8-9 minutes. Let them cool on the baking sheet while you prepare the filling.
- In a medium saucepan, melt 5 tbsp of butter over low heat.
- Stir in brown sugar, 1 1/4 cup chopped pecans, 1 tsp vanilla extract, heavy cream, cinnamon, nutmeg, and a pinch of salt. Mix well until everything is combined.
- Allow the mixture to cook for a few minutes until it thickens slightly.
- Remove from heat and let it cool a bit.
- Once the cookies are cool, spoon the pecan pie filling into the centers of each cookie.
