  • 1 ½ tsp kosher salt, divided, plus more to taste

  • 3 large or 4 small ears of corn, shucked
  • 2 cups cooked whole grains (quinoa, farro, rice, or barley)
  • 3 oz crumbled feta or Cotija cheese (about ½ cup)
  • 4 scallions, thinly sliced
  • ¼ cup extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 avocado, peeled, thinly sliced
  • Creamy Jalapeño Sauce (for serving)

Step-by-Step Instructions:

1️⃣ Season the Steak – Rub steak with 1 tsp salt and 1 tsp pepper. Let it rest at room temperature for 30 minutes.

2️⃣ Grill the Steak – Heat grill or grill pan over medium-high. Cook steak, turning occasionally, until medium-rare (120–125°F) –  about 2–3 min per side for skirt steak, or 3–4 min per side for flank. Let rest at least 10 minutes 🥩.

3️⃣ Grill the Corn – Place corn on the grill until charred on all sides, about 10 minutes. Let cool.

4️⃣ Make the Grain Base – Slice corn off the cobs into a large bowl. Add grains, feta, scallions, olive oil, lime juice, and ½ tsp salt. Toss well 🌽.

5️⃣ Assemble the Bowls – Thinly slice steak against the grain (for skirt steak, cut into 5–6 inch sections first). Divide corn mixture among bowls, top with steak and avocado slices.

6️⃣ Finish & Serve – Drizzle with creamy jalapeño sauce, season with extra salt and pepper, and enjoy immediately.
