14 oz sweetened condensed milk
1/2 cup key lime juice
2 tbsp lime zest
8 oz mascarpone cheese
1 cup heavy whipping cream
2 egg yolks
24 ladyfingers
1/4 cup rum (or grape juice)
1/2 cup sugar
1/2 cup water
1. Make lime-infused syrup: Boil water, sugar, and 1 tbsp lime zest. Cool, add rum.
2. Whisk egg yolks, condensed milk, and key lime juice until smooth.
3. Beat mascarpone and heavy cream until fluffy. Fold in key lime custard.
4. Dip ladyfingers in syrup quickly, arrange in a dish.
5. Spread custard mixture over ladyfingers, repeat layers.
6. Chill for 6 hours, garnish with lime zest.
Use pasteurized egg yolks for safety.
Substitute regular limes if key limes are unavailable.
