Ingredients

- ⅓ cup finely chopped red onion
- ½ red bell pepper, chopped
- 1 jalapeño pepper, diced (remove seeds for less heat)
- 2 tbsp cilantro, finely chopped
- 1 garlic clove, minced (or ¼ tsp garlic powder)
- 2 tbsp lime juice
- ¼ tsp ground cumin
- ¼ tsp salt
- ⅛ tsp black pepper
Step-by-Step Instructions
For the Chicken
- Mix the rub: In a small bowl, whisk together olive oil, lime juice, lime zest, and seasonings. Rub evenly over chicken. (⏳ For best flavor, let marinate 30 minutes–8 hours.)
