Ingredients

For the Muffins:

  • 1 cup canned pumpkin puree
  • ½ cup melted butter (or vegetable oil)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon

For the Cinnamon Swirl:

  • ¼ cup melted butter
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon

For the Cream Cheese Glaze:

  • ½ cup powdered sugar
  • ½ tsp vanilla extract
  • 2–3 tbsp milk

Step-by-Step Instructions

  1. Preheat & Prep Pan 🔥
Preheat your oven to 350 °F (175 °C). Line a 12-cup muffin tin with paper liners or lightly spray with nonstick spray.
  2. Mix Wet Ingredients 🥣
In a medium bowl, whisk together the pumpkin puree, melted butter, sugar, egg, and vanilla until smooth and well combined.
  3. Combine Dry Ingredients
In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.
  4. Fold Together
Gently fold the dry mixture into the wet mixture until just combined. Don’t overmix — that’s the secret to fluffy muffins!
  5. Prepare Cinnamon Swirl
In a small bowl, stir together the melted butter, brown sugar, and cinnamon.
  6. Layer Batter & Swirl
Fill each muffin cup halfway with batter. Add a spoonful of cinnamon swirl, then cover with more batter. Use a toothpick to lightly swirl for that signature cinnamon-roll look.
  7. Bake
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean. Muffins should be golden and fragrant.
  8. Make the Glaze
While muffins cool, whisk together powdered sugar, vanilla, and milk until smooth.
  9. Drizzle & Enjoy 🍁
Drizzle glaze over slightly cooled muffins. Serve warm or at room temperature.

Pro Tips

  • Add a pinch of nutmeg or cloves for extra fall spice.
