Ingredients
For the Muffins:
- 1 cup canned pumpkin puree
- ½ cup melted butter (or vegetable oil)
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
For the Cinnamon Swirl:
- ¼ cup melted butter
- ¼ cup brown sugar
- 1 tsp ground cinnamon
For the Cream Cheese Glaze:
- ½ cup powdered sugar
- ½ tsp vanilla extract
- 2–3 tbsp milk
Step-by-Step Instructions
- Preheat & Prep Pan 🔥
Preheat your oven to 350 °F (175 °C). Line a 12-cup muffin tin with paper liners or lightly spray with nonstick spray. - Mix Wet Ingredients 🥣
In a medium bowl, whisk together the pumpkin puree, melted butter, sugar, egg, and vanilla until smooth and well combined. - Combine Dry Ingredients
In another bowl, whisk flour, baking soda, baking powder, salt, and cinnamon. - Fold Together
Gently fold the dry mixture into the wet mixture until just combined. Don’t overmix — that’s the secret to fluffy muffins! - Prepare Cinnamon Swirl
In a small bowl, stir together the melted butter, brown sugar, and cinnamon. - Layer Batter & Swirl ✨
Fill each muffin cup halfway with batter. Add a spoonful of cinnamon swirl, then cover with more batter. Use a toothpick to lightly swirl for that signature cinnamon-roll look. - Bake
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean. Muffins should be golden and fragrant. - Make the Glaze
While muffins cool, whisk together powdered sugar, vanilla, and milk until smooth. - Drizzle & Enjoy 🍁
Drizzle glaze over slightly cooled muffins. Serve warm or at room temperature.
Pro Tips
- Add a pinch of nutmeg or cloves for extra fall spice.
- Stir chopped pecans or walnuts into the swirl for crunch.
- Freeze muffins (without glaze) for up to 2 months; glaze after thawing.
