1 pound bulk spicy pork sausage
1 pound shredded sharp Cheddar cheese
1 cup almond flour
2 tablespoons coconut flour
2 (.25 ounce) packages unflavored gelatin
1 egg
½ teaspoon baking powder
1. Preheat oven to 325°F (165°C). Line a jelly roll pan with parchment paper.
2. In a large bowl, mix sausage, Cheddar cheese, almond flour, coconut flour, gelatin, egg, and baking powder until well combined.
3. Roll mixture into 1 ½-inch balls.
4. Place on the prepared pan, spacing evenly.
5. Bake for 23–28 minutes, or until golden and cooked through. Internal temp should reach 160°F.
6. Let cool for 5 minutes on the pan before serving.
Store in an airtight container in the fridge for up to 5 days or freeze for 3 months.
