For the Cinnamon Frosting:

- 3 tsp vanilla paste (or extract)
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice (or more cinnamon)

- 3¼ cups powdered sugar
Utensils:
- Hand mixer or stand mixer

- Cookie scooper (optional)
- Piping bag + Wilton Piping Tip #2A
Step-by-Step Instructions
- Cream Wet Ingredients 🧡
In a stand mixer (or large bowl), beat together softened butter, pumpkin puree, sugars, and vanilla until light and fluffy. - Mix Dry Ingredients
In a separate bowl, whisk flour, baking powder, pumpkin pie spice, cornstarch, and salt. - Combine & Chill
Gradually add dry mixture to wet, mixing on low until just combined. Don’t over-mix! Cover the dough and refrigerate for at least 30 minutes (or overnight). This helps the cookies hold their shape. - Shape & Bake 🍪
Preheat oven to 350 °F (177 °C). Scoop dough into 2-inch balls, flatten into disks, and place on a parchment-lined baking sheet, spaced apart. Bake for 10–12 minutes. Let cool completely on the baking sheet. - Make Frosting
Beat frosting ingredients together until smooth and fluffy. If prepping ahead, cover and refrigerate. - Frost & Finish ✨
Pipe frosting in a swirl using the Wilton #2A tip. Sprinkle pumpkin pie spice on top and enjoy!
Pro Tips
- Chill the dough — it prevents spreading and gives the cookies a chewy texture.
- For extra fall flavor, add a pinch of nutmeg or ground cloves.
- Store cookies unfrosted in the freezer for up to 2 months. Frost after thawing for best results.
