4 chicken breasts (skinless, boneless)

4 chicken cutlets (pounded evenly)

1 cup flour (divided)

1 cup breadcrumb

1/2 cup panko

2 eggs, beaten

1/4 cup olive oil (plus extra for frying)

1 cup marinara sauce

1 1/2 cups mozzarella cheese

1/2 cup grated parmesan cheese

Salt and pepper to taste

Instructions

1. Pound each chicken breast evenly using a meat mallet.

2. In a shallow bowl, combine flour with salt and pepper. Dredge chicken in flour.

3. Dip chicken into beaten eggs to coat fully.

4. Combine breadcrumb, panko, and extra flour in a second bowl. Dredge each cutlet until fully coated.
