Ingredients

1 rack of lamb (frenched)

2 tbsp fresh rosemary (chopped)

2 tbsp fresh thyme (chopped)

1 cup breadcrumbs

3 tbsp olive oil (divided)

Salt and pepper to taste

1 cup fresh mint leaves

1/4 cup pine nuts

1/4 cup grated Parmesan cheese

1 garlic clove

1/4 cup extra virgin olive oil (for pesto)

Edible flowers (for garnish)

Instructions

1. Preheat oven to 400°F (200°C). Season lamb with salt and pepper.

2. In a bowl, mix rosemary, thyme, breadcrumbs, and 2 tbsp olive oil for herb crust.

3. Press herb crust onto lamb rack.

4. Heat 1 tbsp olive oil in an oven-safe skillet. Sear lamb crust-side down 2-3 min, flip and sear 2 more min.

5. Transfer to oven. Roast 15–20 min for medium-rare (135°F/57°C).

6. Let lamb rest 10 min before slicing.

7. In food processor, combine mint, pine nuts, Parmesan, garlic, and salt. Pulse.

8. Drizzle in olive oil until smooth pesto forms.

9. Slice lamb into chops, drizzle with mint pesto, garnish with edible flowers.

Notes

Let lamb rest after roasting for juicier meat.

Add a squeeze of lemon to the pesto for extra zest.

Serve with roasted baby potatoes or a fresh arugula salad.

Use white plating for wedding-style presentation.
