Ingredients

2 large eggplants (sliced into 1/2-inch rounds)

2 cups marinara sauce (homemade or store-bought)

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1/2 cup breadcrumbs

2 tbsp olive oil

Fresh basil leaves (for garnish)

Balsamic glaze (for drizzling)

Salt and pepper to taste

Instructions

1. Preheat oven to 400°F (200°C).

2. Arrange eggplant slices on a baking sheet and brush with olive oil. Season with salt and pepper.

3. Roast eggplant for 20-25 minutes, flipping halfway through, until golden brown. Let cool slightly.

4. Lower oven to 375°F (190°C). Begin assembling towers: layer eggplant, marinara, mozzarella, and Parmesan, stacking 3–4 slices high.

5. Finish each tower with marinara, mozzarella, and Parmesan.

6. Bake assembled towers for 15–20 minutes, until cheese is melted and bubbly.

7. Let towers rest for 5 minutes. Drizzle with balsamic glaze and garnish with basil.

8. Serve warm as a main course or centerpiece dish.
